GREEN Eggs & Ham

Looking for some eggstremely tasty recipes to celebrate Dr. Seuss’ birthday? You can always add a few drops of green food coloring to your basic scrambled egg mixture, of course, but this recipe for “Green Eggs and Ham Deluxe” from one of our favorite book web sites, Seussville.com, sounds fabulous … of course, our kids are likely to pick out every parsley fleck, but we don’t care! GREEN EGGS & HAM DELUXE
Serves 4 Sam-I-Am fans
2-4 ounces of ham, diced
8 eggs
2 tablespoons milk
1/4 cup chopped chives
1/8 cup chopped fresh parsley
Salt and pepper to taste
1 tablespoon butter
1. Whisk the eggs, milk, ham, salt, pepper, chives, and parsley until frothy.
2. Heat a tablespoon of butter in a large frying pan over medium heat until the butter begins to sizzle, then add the egg mixture and stir gently until the eggs are nicely scrambled.
